After your first bite you will be puzzled and try to find out what these are a cake, a brownie or what? Well, these are fudgy brownie cookies and they are easy to bake and absolutely delicious!

What is the secret to making chewy cookies?

Resting your cookie dough in the fridge is the secret tip. After you prepare the tip, rest it for at least half an hour, I leave mine for at least 2 hours in the fridge. The longer you let your dough rest in the fridge the more chewy they will become. When in the fridge the water will evaporate and the sugar content will increase, the baking powder will activate and all this will make your cookies chewy.

By the time you take out the cookie dough from the fridge the dough will no longer stick to your fingers, which is sign that it is ready to be shaped and baked.

These brownie cookies are easy to prepare – one-pot only. Plus another good point about this recipe is that it requires only a few basic ingredients.

  • eggs
  • vegetable oil
  • vanilla extract
  • cacao
  • sugar
  • baking powder

No, there is no mistake in the list, no butter, nothing tricky either.

How to prepare brownie cookies?

  • whisk the eggs with the sugar.
  • then one by one add the remaining ingredients while whisking
  • turn the ingredients into a sticky dough, then leave it covered in the fridge
  • take out from the fridge and make small balls out of the dough
  • coat with caster sugar and place on an oven tray with oven paper
  • sprinkle with additional caster sugar
  • bake in a pre-heated oven at 160° Celsius( 300° F) for about 10-12 minutes.

Chewy Brownie Cookies

Ingredients

  • 2 eggs
  • 100 grams granulated sugar
  • 100 milligrams vegetable oil sun flower oil or light olive oil
  • 50 grams cacao
  • 1 teaspoon vanilla extract
  • 10 grams baking powder
  • 150+/- grams flour
  • 75 grams chocolate chips optional
  • 2-3 tablespoons caster sugar

Instructions

  • Whisk 2 eggs and 100 grams sugar until the sugar dissolves.
  • Add the 100 milligrams vegetable oil, 50 grams cacao and 75 grams chocolate chips (if using) to the eggs and mix again.
  • When the mixture is well combined, gradually add the flour and the baking powder. Mix to obtain a sticky, slighty runny dough. Cover the dough and let it sit in the fridge for at least half an hour to 2 hours.
  • When time is up take out the cookie dough from the fridge and make small, walnut-size balls.
  • Pour two tablespoons of caster sugar in a bowl. After shaping all the dough, roll the cookie balls in the caster sugar to coat generously all around.
  • Then place the cookies in an oven tray with oven sheet. Make sure to leave some space between the cookies as they will rise. Sprinkle with additional caster sugar.
  • Bake in a pre-heated oven at 160° Celsius (300° F) for about 10-12 minutes. If the cookies stay in the oven too long, they will dry out. Be careful to keep an eye on them while in the oven.
  • When time is up take the cookies out of the oven. Let rest for a few minutes. Sprinkle with caster sugar before serving.

Notes

This is a delicious cookie which is slightly moist in the inside and crunchy on the outside. 
You can replace the 100 grams sugar with 50 grams honey, maple syrup, agave or teaspoons stevia. 
You can add chocolate chips if you choose to. 
Make sure to sieve the flour before hand. Add the flour gradually. The texture of the dough should be sticky and somewhat fluid. Stop adding flour as soon as you reach this texture. Alternatively add a bit more until you reach this consistency.
