Chocolate Cookies with Coconut Flakes

This is an easy to memorize chocolate chip recipe from scratch. Most of the ingredients are either 60 grams or 6 grams.

You will need 60 grams brown sugar, 60 grams butter, 60 grams coconut flakes, 60 grams chocolate chips and 6 grams of baking powder, 6 grams of vanilla, 6 grams raisins, 6 grams of cinnamon. I managed to prepare the ingredient list this way, as I thought it was fun and as I have difficulties in memorizing such details.

These chocolate chip cookies need only about 5 minutes to put together. You just need to mix an egg and the sugar with a spatula in a large bowl. Then add and mix all the other ingredients except the flour and the baking powder. Finally sift and add the flour gradually. Also add the baking powder together with the flour. Knead to obtain a sticky dough. As a final touch pour in the chocolate chips and mix one last time. No need to use a machine for knead as the dough will only need 1-2 minutes.

Scoop the dough with an ice cream scoop size 10 or just make small balls in your hand. Place the dough balls onto a baking sheet. Leave at least 5 cm (2 inches) between cookies so they do not stick to each other. Press them down a little bit. Bake in a preheated oven at 170°C (325°F) until the edges and the bottom of the cookies turn brown. Will take about 20 minutes.

What makes chocolate chip cookies flatten?

With this recipe, you will not get very flat cookies as you might have noticed in the pictures. This is because the recipe does not have too much butter in it. The amount of grease and flour affects how flat your cookies end up.

For this recipe after preparing the dough and placing the little balls on to the oven tray, I press them down with a flat tool or with the back of a flat-bottom mug. And after baking and taking them out of the over I repeat.

You can replace granulated sugar for brown sugar in case missing in your pantry.

Ingredients

  • 1 egg
  • 60 grams butter at room temperature
  • 60 grams brown sugar or granulated sugar
  • 60 grams coconut flakes
  • 6 grams cinnamon
  • 6 grams vanilla extract
  • cup flour
  • 6 grams baking powder
  • 60 gram chocolate chips or chopped chocolate

Instructions

  • Use a large mixing bowl.
  • Break the egg. Add the sugar and the butter. Mix with a spatula so that the buter melts and blends with the egg.
  • Add the coconut flakes, vanilla extract, cinnamon and mix.
  • Add the sifted flour and baking powder gradually. Stop adding once you obtain a soft and stick dough.
  • Finally toss in the chocolate chips, knead just enough that the chocolate chips are equally blended in the dough.
  • Make small balls with your hands or using an icecream scoop and place them on to a baking sheet. Leave 5 cm (2 inches) between cookies.
  • Press down on the cookies to slightly flatten them.
  • Bake until the edges and the bottom turn brownish in a preheated oven at 170°C (325°F), no fan, top and bottom heating. Will take about 15-20 minutes.
  • Let rest and cool, serve.
