Use a large mixing bowl.
Break the egg. Add the sugar and the butter. Mix with a spatula so that the buter melts and blends with the egg.
Add the coconut flakes, vanilla extract, cinnamon and mix.
Add the sifted flour and baking powder gradually. Stop adding once you obtain a soft and stick dough.
Finally toss in the chocolate chips, knead just enough that the chocolate chips are equally blended in the dough.
Make small balls with your hands or using an icecream scoop and place them on to a baking sheet. Leave 5 cm (2 inches) between cookies.
Press down on the cookies to slightly flatten them.
Bake until the edges and the bottom turn brownish in a preheated oven at 170°C (325°F), no fan, top and bottom heating. Will take about 15-20 minutes.
Let rest and cool, serve.
