Green Pea Soup

Ingredients

  • 250 grams green peas
  • 1 potato
  • 1 zucchini
  • 1 onion
  • 1 garlic clove
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 litre water
  • 4-5 stalks dill or parsley for garnish
  • 1 pinch red pepper flakes

Instructions

  • Chop the onion, garlic, potato and zucchini to small pieces.
  • Heat a large pot. First add the onions, sauté until translucent.
  • Then add the garlic and sauté for 1-2 minutes.
  • Then add the chopped potato and continue to sauté.
  • Finally add the peas. And continue to sauté until the potatoes are softened.
  • Add about a litre of warm water. Bring to boil and let simmer for about 10 minutes.
  • Use a hand blender to get rid of the particles to obtain a smooth soup. You can add 200-250 milliliters additional boiling water if the soup becomes too thick. Bring to boil one last time and serve warm.
  • Garnish with lemon wedges and chopped dill or parsley and sprinkle red pepper flakes.
