Healthy Vegan Pea Soup: Dairy Free

Green has never been my favorite color for a soup, it reminds me of certain cold soups which I am not a fan of. However this recipe looked so healthy and vegan, I gave it a try. Half of the household loved it the other half did not want to have it again. So what do you say?

It is made with green fresh or frozen peas, a potato and a zucchini. After reading in New York Times about the fact that frozen green beans are better than fresh green beans, I chose to use frozen beans. This recipe has no milk, cream or yogurt and not even any flour or starch in the ingredients but it definitely turns out with a creamy texture thanks to the potato.

Is green bean soup healthy?

The answer is a strong yes! Green beans are low fat and good for your diet. They do not contain any cholesterol and good for your heart. Contains proteins and supports your muscles, organs, bones and even hair.

It is a quick and easy recipe. Adjust the thickness as you like by adding additional boiling water or not.

Ingredients

  • 250 grams green peas
  • 1 potato
  • 1 zucchini
  • 1 onion
  • 1 garlic clove
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 litre water
  • 4-5 stalks dill or parsley for garnish
  • 1 pinch red pepper flakes

Instructions

  • Chop the onion, garlic, potato and zucchini to small pieces.
  • Heat a large pot. First add the onions, sauté until translucent.
  • Then add the garlic and sauté for 1-2 minutes.
  • Then add the chopped potato and continue to sauté.
  • Finally add the peas. And continue to sauté until the potatoes are softened.
  • Add about a litre of warm water. Bring to boil and let simmer for about 10 minutes.
  • Use a hand blender to get rid of the particles to obtain a smooth soup. You can add 200-250 milliliters additional boiling water if the soup becomes too thick. Bring to boil one last time and serve warm.
  • Garnish with lemon wedges and chopped dill or parsley and sprinkle red pepper flakes.
