Vegan Potato Pancakes: Low Cost, Hearty, Very Little Oil

This is a Vegan Potato Pancake. It is very practical, low cost dish you can enjoy any time of the day, including breakfast and tea time. It comes out like a savory pancake.

I have prepared exact measurements about the amount of potatoes and flour in the recipe to make it easier to make sure you obtain the right texture. Use your hands or a rolling pin to make a flat palm sized shape. If the dough is sticking sprinkle with some corn flour. Corn flour will ensure a little twist as it is crunchier compared to flour.

Use a non-stick skillet for frying and add only few drops of oil to the skillet for each gozleme. I chose to use olive oil. Flip sides and fry each side about 2 minutes, until golden, as seen in the picture above.

You can choose to add chopped parsley and dill for additional flavor. Goes well with a cup of tea, some cheese and even olives.

Vegan Potato Pancake

Ingredients

  • 4 potatoes (about 650 grams)
  • 100 grams flour
  • 50 grams light olive oil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1-2 tablespoon corn flour
  • 1 tablespoon light olive oil to cook

Instructions

  • Wash, the potatoes. Place them in a pot and add water and salt. Boil until well done, check with a knife.
  • Peel while still warm and mash them to make a puree.
  • Add the spices and the light olive oil, mix.
  • Gradually add about 100 grams of flour. Stop adding when the mixture turns into a dough that is not sticky.
  • Make 6 pieces out of this potato/flour dough.
  • Sprinkle some corn flour on your working place and make small cylinders out of each piece using your hands or a rolling pin. Do not make them too thin, about half a centimeter thickness will do.
  • Heat a skillet, add few drops of light olive oil and gently place the gozleme on the skillet. Cook each side until golden.
  • Repeat until all the material is finished.
  • Serve warm, with sides of choice; such as olives, cheese, honey, jam, cucumbers, with coffee or tea.
