Paradise Dessert: Amazing Kadayif And Pudding

Many have asked me to post the recipe for this light dessert; I was late, as I needed a nice picture till today. It is not my favourite picture still, but I chose to post it not to loose any more time. This dessert is definitely a show off at pot lock parties. I am sure that people will come up and ask for your recipe.

All you need to find is kadayıf – the sherred phylo – all the rest is quite basic ingredients. If hopeless about finding kadayıf, then you can just prepare the pudding and enjoy. Obviously the pomegranate seeds are nice to have to add color and make the dessert more appealing.

Kadayif is dough prepared and cooked in thin threads. They use various machines to prepare kadayıf. The dough contains only water and flour. In Turkey you can find the best kadayıf in yufka shops, in London you can find it in Turkish markets. 

For this dessert you sauté the kadayıf and prepare a pudding. The kadayıf part might make a bit mess on your stove, to prevent this use a large pot. It will take time to turn them looking crispy and brownish; be patient it happens. Continue to mix with a spoon over medium heat.

Paradise Dessert 2When the kadayif is ready spread half of it on your serving dish, then pour on the pudding and pour the remaining half on top.

Keep in fridge before serving. Now you are ready to garnish and serve. The best looking garnish is to sprinkle with pomegranate seeds.

This is a perfect name for this light; crispy but soft dessert. If you can find kadayif, you must try.

Ingredients

Kadayif

  • 250 grams shredded phyllo
  • 3 tablespoons butter
  • 150 grams sugar
  • 150 grams walnut

Pudding

  • 1 litre milk
  • 3 tablespoons corn flour
  • 4 tablespoons flour
  • 175 grams sugar
  • 75 grams whipping cream powder

Instructions

Kadayif

  • Start with the kadayif first. If the kadayif is stiff separate thoroughly with your fingers.
  • Melt the butter in a large pan. Add the chopped walnuts and stir for 2 minutes.
  • Add the kadayif and sauté until they take a brownish color. It will take some time, be patient, they will eventually get there. Always mix and make sure they do not get burnt.
  • When close to getting ready, add the sugar and mix well again.
  • Place half of the kadayıf on your service plate. Set aside the other half until the pudding is ready.

Pudding

  • Put all the pudding ingredients except the whipping cream powder in a pot. Mix well, then place on the stove.
  • Over medium heat and always stirring cook until the mixture starts to look and feel like a pudding.
  • Set aside to cool. Then add the whipping cream powder and mix until smooth and creamy.
  • Then pour evenly all the pudding on top of the half of the kadayıf.

Kadayıf

  • Add the remaining browned kadayıf on top to cover the pudding.
  • Sprinkle with cinnamon and garnish with pomegrante seeds if available.
  • Serve chilled in the fridge. Best when newly made as it will be crispy on top and soft in the middle.
