Easy Orzo and Tomato Soup: healthy, hearty and warming

This was the first soup I learned to make when I was young. It is very basic and straightforward. I add plenty of dry mint flakes which increases the flavor. This soup is at its best when the tomatoes are in season giving out a great color and taste.

You will see that the recipe has chicken tablet, you can leave it out and make the soup vegan. You can leave it out and replace it with chicken stock if available.

Flour is added for flavor and thickening, this is also an optional ingredient.

The orzo shape is not critical either, use any shape available. Risoni and filini are the most common options.

Use just grated tomato when in season, but replace with 2 tablespoons of tomato paste if not. You can use them in combination too.

Ingredients

  • 2 tablespoons orzo
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2-3 tomatoes grated
  • 1 tablespoon tomato paste
  • 1 chicken tablet optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon mint
  • 1 lemon

Instructions

  • Add the butter and the olive oil into a pot. Melt the butter over medium heat.
  • Add the orzo and the flour and mix until you can start smelling the flour.
  • Then add the grated tomato. If the tomato is not colorful enough you may replace or also add a tablespoon of tomato paste. If replacing add 2 tablespoons of tomato paste.
  • Mix all together and then add cold water.
  • Also add all the spices, to your taste.
  • Bring to boil and then let simmer until the orzo is cooked al dente
  • Serve warm with lemon wedges.
