Milk Pudding with McVities Crumble

I had a hard time naming this milk pudding with McVities crumbles. For me it is a Fake Chicken Breast Dessert, but it is also a pudding as it has starch in it and not an egg like a custard would. Everybody was thumbs-up from the first spoon they had, so I wanted to share this simple recipe with you too.

What are McVities Biscuits?

McVities is a digestive wheatmeal biscuit, originated in Scotland, first manufactured in 1892.  Since 1939 the McVitie’s have expanded their business. McVitie’s digestive is one of the best-selling biscuits in the UK. More or less every country has its own popular biscuit, so another brand that is more accessible where you are living will be a good choice too. Graham crackers, petit beurre and tea biscuits will all be good for this recipe.

How to make a biscuit crumble base?

It is very easy to make a crumble base. Just crumble the biscuits with your hands or a food processor or crush them using a mortar and pestle. Mix with a tablespoon or two of melted butter. There, it is ready! No need to add sugar, as the biscuit is already sweet.

How to make the milk pudding?

Start with wetting the pot. Just rinse and leave the pot wet. This will prevent the milk from sticking to the pot and will help you wash-up easier later.

Add the flour, starch and sugar to the pot and pour on the milk. You can use flour and starch of your choice. I used skimmed milk and mixed all-purpose flour with bread flour and used wheat starch. You can use plant-based milk and butter to make this recipe vegan. No egg is required.

Mix continuously and bring the mixture to boil over medium heat. When bubbles start popping remove from heat. Add a tablespoon of butter and mix until melted.

Add vanilla extract and a grated lemon’s zest or orange zest for additional flavor.

Pour into serving bowls or a pyrex dish and keep covered in the fridge to chill before serving.

How to serve a milk pudding?

You can serve ;

  • in small single-serving bowls.
  • You can chill it in a large pyrex and serve in slices.
  • You can flip up-side-down and serve it on a plate.
  • with no garnish.
  • with just a sprinkle of ground cinnamon.
  • You can make a biscuit crumble base on the bottom, in the middle and/or on the top.
  • Garnish with ground cinnamon, chocolate, banana, cherries, walnuts.
  • Prepare a caramel for topping.

Ingredients

  • 1 litre milk
  • 117 grams all-purpose flour aerated
  • 20 grams starch corn or wheat
  • 150 grams white granulated sugar
  • 2 tablespoons butter divided
  • 1 lemon's zest grated
  • 1 teaspoon vanilla extract
  • 10 digestive biscuits crumbled
  • 1 teaspoon ground cinnamon for garnish

Instructions

  • Wet the pot with water.
  • Add the sugar, flour and starch and mix to combine.
  • Pour on the milk and cook over medium heat while continuously mixing.
  • Remove from heat when the mixture thickens and bubbles start to pop up.
  • Immediately add a tablespoon of butter, a lemon's zest and a teaspoon of vanilla extract.
  • Blitz the biscuits in a food processor until crumbly. Mix the crumbled with a tablespoon or two of butter. Transfer into a 25x25cm pyrex dish and press down to make firm and flat.
  • Pour the pudding on top. Let cool in the fridge. The pudding will get firmer when chilled.
  • Sprinkle with ground cinnamon before serving.

Notes

You can use whole or skimmed milk. 
You can use a plant-based milk and butter. 
No, you will not feel the raw flour taste if you cook slowly over medium heat.
