I just prepared these to accompany Pasta al Forno a la Turca (Turkish style pasta in the oven). All the family loved it. So much that my husband rushed back to the organic bazaar to get some more spinach so I could do it again, but unfortunately they were all finished.

December is the perfect time to find these fresh baby spinach and delicious white radish. By now I guess everyone knows how healthy spinach and white radish is, so I will not comment on this.

It is again – so very easy, you can add some other ingredients such as fresh red peppers or cucumbers or even an avocado or cauliflower sprouts, it is all up to what you have and what you want. This is what I wanted and had.

I suppose the difference comes from adding two cruches garlic cloves, the freshness of the spinach. Another little trick is that you should first add the salt, then the olive oil and finally the vinegar. I always prefer to prepare my salads in a large mixing pot. Mix really well and then transfer to a serving dish or individual bowls.

Baby Spinach Salad with White Radish

So healthy, so fresh, so tasty.

Ingredients

  • 400 grams spinach
  • ½ white radish
  • 1 tomato
  • 2 garlic cloves
  • 1 teaspoon salt to taste
  • 1 teaspoon red pepper flakes
  • 1 teaspoon flax seed
  • 3 tablespoon olive oil
  • 2 tablespoon vinegar apple or grape

Instructions

  • Cut off and discard the end stems of the spinach.
  • Rİnse gently. Soak in water with 1 tablespoon of vinegar for about 10 minutes, to make sure you get rid of dust and similar.
  • Rinse again under flowing water. Tear with your hands to large pieces. Be gentle and try not to crush or squeeze the spinach. Put them in a large mixing bowl.
  • Peel the white raddish. Chop to small pieces as seen in the picture. Add to spinach.
  • Wash and cut to slices the tomatoes. Add to spinach.
  • Crush, mince to tiny pieces two garlic cloves and add.
  • Add first the salt, then the other spices. Then add the olive oil and finally the vinegar. Mix everything well with a wooden spoon. Serve and enjoy.
