Amazing Roasted Chicken with Marinade

You will be surprised how easy to prepare this chicken. It is a feast for the eye and the tummy. The pictures do not do justice to reality. I will post better ones as soon as possible.

Start with a small bowl in front of your spices and herbs. Mix all the marinade ingredients until well combined. Then spread all around the chicken of your choice. This marinade works with any cut of chicken as well as a whole chicken. Once the marinade is well spread all around keep the chicken in the fridge for about 30-60 minutes.

The recipe for the marinade has many items, if you are missing a few do not worry or try to substitute with something similar. Garlic powder can be replaced with 2 crushed garlic cloves. Onion powder can be replaced with a large grated onion, do not forget to squeeze out and discard the water of the onion.

I generally slice couple of potatoes, onions and garlic cloves and sprinkle them with some olive oil, smoked paprika, salt, pepper, garlic powder, rosemary and thyme and bake them too until crispy and well done.

I serve the chicken and the sides with a rice pilaf with orzo and a shepherd’s salad.

This is our New Years Eve dinner. I tend to skip turkey as it is never as juicy.

Ingredients

  • 1 whole chicken

Marinade

  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 teaspoons smoked paprika
  • 1 teaspoon jerk seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon chilli powder
  • 2 teaspoons cumin
  • ½ teaspoon ground black pepper
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons plain yogurt
  • 1 tablespoon tomato paste

Instructions

  • Mix all the marinade ingredients with a spoon until well combined.
  • Spread the mixture all around the chicken, make sure there is no place left untouched.
  • Place the chicken in a bowl, cover and leave in the fridge for about half an hour or an hour.
  • Pre-heat the oven to 240°Celsius.
  • Move the chicken into a baking tray and bake in the oven until golden and crispy. Probably for 40-50 minutes.
