Easy Cocoa Pudding: Kid’s Favorite

I guess every family has a pudding that is a family tradition – this one is ours.

Although it is called Cocoa Pudding; also in Turkish – Kakao Puding, the name of this pudding for us has always been  Black (Kara in Turkish) for us. I remember fighting over who should be scraping the bottom of pot while still warm. 

How do you make chocolate pudding with cocoa powder from scratch?

The key to making a good pudding is to use a good quality cocoa and to mix all the ingredients with half of the milk before starting to cook it. One very important thing is to spare some time to mix continuously until the pudding is ready to be removed from the heat.

My mother used to hide a biscuit at the bottom of every bowl. The biscuit she chose was either a petite bureu or a milk biscuit.

I suggest to taste before closing the heat and adjust the sugar amount according to your taste. Do not wait until it is too late to adjust.

I have written “heaping tablespoon” for several of the ingredients in this recipe; to prevent any misunderstandings below is a picture of what I meant. The way you should measure this is; fill your spoon with the ingredient such as flour or sugar then softly knock against the side of the main bowl whatever falls down means it was too much and the remaining will give you a heaping spoonful.

How do you fix runny pudding?

This recipe will thicken quickly as it already has flour and eggs in its ingredients list. But if you somehow end up with a runny pudding you can mix a teaspoon of flour or starch in a small bowl with a teaspoon or two cold water and add it to the pot pudding is cooking and whisk to blend with a spoon and continue to cook until it eventually turns into a pudding.

Ingredients

  • 1 litre milk
  • 2 eggs
  • 3 tablespoons flour heaping
  • 9-10 tablespoons sugar heaping
  • 3 tablespoons cocoa heaping – good quality
  • 1 teaspoon butter optional

Instructions

  • Place the flour, sugar, cocoa, eggs in a pot and 500 millilitres of milk and mix well for 1-2 minutes with a mixer.
  • Add the remaining milk and start to cook over medium heat while always mixing with a whisker.
  • When the mixture gets warm add the butter. Butter serves to make the pudding shiny on top and for additional flavor. You may choose to leave it out.
  • When the mixture turns into a pudding and you start to notice bubbles remove from heat.
  • Pour into serving bowls immediately. Keep in the fridge after they cool.
  • Serve chilled. Leave them plain or garnish with coconut flakes, chopped walnuts, ground pistacchio or walnuts.
