Some treats are so granted, plain and easy I hesitate to post them. On the other hand I have always loved to have these bread slices when I was a child and now I prepare it for my own kids. So I decided to go ahead and post it.

My mother used to prepare these when we had some left over or dried up bread, not to throw them away. Some people use less expensive cheese for such treats and for börek. I prefer to use the cheese I use for breakfast, it makes a huge difference.

You can play around the recipe, you can choose to spread some butter on the bread before spreading the cheese spread or you can change the type of bread you choose or you can leave out the egg and/or the red pepper. I am sure you will find your own best; this is mine. Now I have to prepare this again tomorrow morning. If you are not used to having cheese in the morning; you can prepare it for tea-time.

Bread with Feta Cheese and Parsley

An easy and healthy breakfast treat.

Ingredients

  • 8 bread slices
  • 150 gram white/feta cheese grated
  • 1/2 bunch parsley chopped
  • 1 egg optional
  • 1 tea spoon chilli paprika

Instructions

  • Wash and chop the parsley, do not use the large stems.
  • Wash the cheese under flowing water if it has a creamy texture on top and then either grate or crumble the cheese.
  • Break the egg in another small dish and whisk it slightly and add to the cheese.
  • Mix the parsley, cheese and the egg. Turn it into a spread, using a spoon or a fork.
  • Slice the bread to 1,5-2 centimeter thickness. Any type of bread will do.
  • Evenly spread the cheese mixture on one side of each slice. Sprinkle with paprika.
  • Roast in the oven for about 10 minutes at 200 degrees Celsius, until cheese melts. Serve while still warm. Enjoy.
