Apricots filled with Clotted Cream

It is so easy to prepare these and they have such lovely colors. I have prepared them recently for an event to introduce my Turkish Cooking Classes. Decided to put them in little blue chocolate papers to make them even more attractive.

In almost every Turkish house there is a pack of dried apricots, quite handy. These are definitely better than eating candy.

You need to soak and then boil the apricots and later open them up to fill them with the clotted cream.

If you find these too creamy, you can add walnuts, nuts and put less cream. Do not forget to garnish with grounded pistachio.

Serve chilled and 2 or 3 per serving.

Apricot filled with Clotted Cream

This is a very easy to make recipe. Looks fabalous.

Ingredients

  • 250 grams dry apricots
  • 200 grams sugar
  • 250 millilitres water
  • 100 grams clotted cream
  • 1 tablespoon ground pistachio
  • 100 grams walnuts optional

Instructions

  • Wash the dry apricots. Put them in a bowl and soak with water. Keep in the water for 3 hours or overnight. Drain and rinse before the next step.
  • Put the apricots in a pot. Add water. When water comes to boil add the sugar.
  • Cook over medium heat for 5 minutes. Remove from heat and drain the excess water. You can save this syrup for another dessert.
  • Pour the apricots in a serving dish. Wait for a few minutes until they cool.
  • Take each apricot cut sideways with a knife to make a hole in each apricot and fill the hole with half a walnut and half a teaspoon of clotted cream. Dip the creamy part into a small plate of ground pistachio. Place in a service dish with creamy part upwards.
  • Serve 2-3 chilled apricots per person. Enjoy.
