Ingredients
250gramsdry apricots
200gramssugar
250millilitreswater
100 gramsclotted cream
1tablespoonground pistachio
100gramswalnutsoptional
Instructions
Wash the dry apricots. Put them in a bowl and soak with water. Keep in the water for 3 hours or overnight. Drain and rinse before the next step.
Put the apricots in a pot. Add water. When water comes to boil add the sugar.
Cook over medium heat for 5 minutes. Remove from heat and drain the excess water. You can save this syrup for another dessert.
Pour the apricots in a serving dish. Wait for a few minutes until they cool.
Take each apricot cut sideways with a knife to make a hole in each apricot and fill the hole with half a walnut and half a teaspoon of clotted cream. Dip the creamy part into a small plate of ground pistachio. Place in a service dish with creamy part upwards.
