Zucchini is one of my favorite vegetables. It is light and tasty. As most vegetables zucchini has many health benefits; good for heart, eyes, bones and does not contain many calories.

I like fried zucchini, but I do not like frying. So here is my fried zucchini out of the oven. Very little time required to prepare these. You can even make it quicker by not peeling the zucchini. Just dice, and toss them into an olive oil and spices mixture. Make sure to mix so the each piece is well coated.

I have used garlic powder, but grated garlic will work just as good.

Then all you need to do is bake and enjoy this vegan treat. A scoop of plain or garlicy yogurt will go well next to these delicious zucchini.

Zucchini Fried in the Oven

Ingredients

  • 3 zucchini
  • 3 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon black pepper

Instructions

  • Pre-heat the oven to 180° Celsius (350° Fahreneit).
  • Peel and dice the zucchini to 1 centimetre thickness (about 0,4 inch).
  • Add all the other ingredients into a bowl and whisk with a spoon.
  • Toss in the zucchini slices so that they are covered with the mixture.
  • Lay down the zucchini slices as a single layer. Bake until golden brown in the oven. Flip sides to bake the other side.
  • Serve while still warm.
