Easy Zebra Cake: Vanilla And Cocoa

This beautiful cake has been a regular for our household for some time. My daughter loves it, I try to convince her to bake something else – so I can post a different recipe – but she keeps on asking for this specific cake.

I use a glass baking dish for this cake, just for the sake of the shape I believe a round baking tin will work the best.

Start with mixing the sugar and the eggs. They should get creamy, it is not necessary to turn the mixture into a foam.

Some recipes ask for dividing the mixture exactly to half, it is not a must. Trust yourself and move on. Here is a video how to pour the cake mixtures to the baking dish/tin:

I do not make a big fuss about making it perfect or measuring the lines and amounts. I believe cooking should be fun not a burden.

This cake is pretty even before it goes into the oven. Decorating the top is not necessary either, but takes a minute only. Here is a video about how to do it.

Ingredients

  • 3 eggs room temperature
  • 250 grams sugar
  • 300 millilitres milk
  • 200 millilitres oil light olive oil or sunflower oil or similar
  • 400 grams flour aerated
  • 10 grams baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons cacao powder

Instructions

  • Heat the oven to 160° Celsius with top and bottom heating but no fan.
  • Break the eggs and add the sugar, mix until the mixture becomes creamy.
  • Add the milk and oil and mix to blend.
  • Also add the vanilla extract.
  • Add the baking powder and the flour gradually and mix until the mixture is smooth again.
  • Pour half of the mixture in an another pot.
  • To the remaining mixture add two tablespoons of cacao powder and mix to blend.
  • Grease the bottom and the sides of the baking dish/tin.
  • Start pouring the mixtures one by one starting from the middle. Pour some of the cacao mixture first and then some of the vanilla mixture. Repeat until both are finished. By the end the mixtures are finished all the baking dish/tin will be covered, as with each mixture addition the previous addition will spread out to the sides.
  • With a tooth pick make slicing traces from the center of the cake to the sides. Then repeat making new traces from the middle of the slices, this time from the sides to the center.
  • Bake for about 40-50 minutes. Check by poking a knife in the middle of the cake, if the knife comes out clean it shows that the cake is ready.
