Soups are one of our indispensable flavors. A cozy and warm soup that will warm our hearts is one of the most needed flavors when the winter months are approaching.

Here is the recipe of a potato soup from the city of Bolu, Turkey. It is full of flavors and vitamins. Requires only common ingredients such as onion, garlic and potatoes.

If you have meat/bone stock use it for this soup. You can use plain water too.

Potato Soup

Ingredients

  • 3 potatoes
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 litre water and meat tablet or bone stock

Thickenning

  • 1 egg
  • 1 teaspoon lemon's juice
  • 1 pinch salt

Garnish

  • 1 tablespoon butter
  • ½ teaspoon red pepper flakes

Instructions

  • Chop the onion and the garlic.
  • Peel the potato and chop to small cubes.
  • Add the butter and the olive oil in a slightly heated pot and melt the butter over medium heat.
  • Add the chopped potatoes and saute until crispy.
  • Add the flour and saute until you start sensing the smell of the flour.
  • Add cold water, spices, mix and cover the lid.
  • Cook until the potatoes are well done.
  • If available use a food processor to obtain a smooth soup. If not strain.
  • For the thickening break the egg, whisk with a pinch of salt. Add the lemon juice and combine.
  • Then heat up the thickening mixture by adding scoops of the soup, one at a time while mixing, to make sure the eggs do not get cooked.
  • Once the thickenning mixture is warm add it slowly to the main pot, again mixing all the time.
  • Just before serving melt a tablespoon of butter in a saucepan, add a teaspoon of red pepper flakes, bring to sizzle and drizzle on each bowl before serving.
