Easy Pickled Red Onions Recipe

Are you someone who noticed pink pickles in a dish and wondered what these were and came here searching for a recipe? You are in the right place. Now you can add pickled red onions to jazz up your favorite comfort food!

Ingredients

Red onions are the main ingredient. You can use white onions too, but you will not obtain the pink color, so I would wait until you get fresh red onions to make this recipe.

Vinegar, is another must-to-have item. I used white wine vinegar (not distilled white vinegar), apple cider vinegar, rice vinegar, grape vinegar are some other good options. Do not use balsamic vinegar as it has its own color and generally it is thick and not suitable for pickling.

Salt and sugar, use a 1:2 ratio when adding salt and sugar. So if 1 teaspoon of salt requires 2 teaspoons of sugar.

A variety of Seasonings can be included for additional flavor. For this recipe, I have used a single clove, 2 bay leaves, fennel seeds, peppercorns, a garlic clove, mustard seeds, currants and coriander seeds.

Adding thyme sprigs, raisins, replacing sugar with honey might be other options to try which I have not tried yet.

How to make pickled red onions?

  • Start with slicing the red onions into rings or cut them into half and slice. Slices should be thin and as equal as possible.
  • Add half of the spices and herbs to the bottom of a glass jar with a lid.
  • Then add the onions.
  • Press down gently, do not crush the onions.
  • Dissolve the sugar and salt in vinegar before pouring on top of the onions. Vinegar should cover the onions.
  • Add remaining spices and herbs on top.
  • Cover the lid and let chill in the fridge.
  • You can have them an hour later but gets better the next day.

Keeping a jar of pickled red onions in your fridge

Keep a jar of pickled red onions in your fridge and add a few rings to your salads, burgers, tacos, meat dishes or pasta – there is no limit. These pickled onions can stay in your fridge for almost a month, however, they will lose their crunchiness in time, so making them in a 1 litre (35 fl oz) jar might be a good idea.

Equipment

  • 1 litre glass jar with lid

Ingredients

  • 3 red onions
  • 1-2 garlic cloves sliced
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon peppercorns
  • 1 teaspoon fennel seeds
  • 1 clove
  • 1 teaspoon currants

Instructions

  • Peel and cut the onions into thin rings.
  • Place half of the seasonings to the bottom of the jar. Also, add the sliced garlic.
  • Add the onions on top, no need to separate the onion rings.
  • Place the remaining seeds on top.
  • Dissolve the sugar and salt in vinegar and pour vinegar on top of the onions.
  • Press down the onions lightly, but do not crush.
  • Cover the lid and keep it in the fridge.

Notes

You can keep pickled onions for almost a month in the fridge. It will get softer in time. 
If cutting in rings is not what you prefer, cut the onion into half and then slice.
 You can also add raisins or a chilli pepper.
