Easy Homemade Bread: No Knead, No Fuss

I am proud of myself, my first bread came out perfectly. Making bread is not my thing, so if I have succeeded, everybody else can.

I did quite a bit of research and created this recipe. I am absolutely happy with it. As do to the circumstances I do not have special yeasts, flours or cannot afford to waste any ingredient as I do not want to go out these days.

As I said it came out really delicious, so hopefully when life is back to normal, I might even continue to bake it.

No big mess, no kneading, most of the time required is just passive time waiting for the dough to get bigger. All the tips are already included in the recipe below.

I have used a springform cake tin without the bottom. The dough is not stiff so this is required to have it keep a shape, other wise it will be all over the baking tray and will not rise.

Do keep the passive times. Letting the dough or the bread sit longer than necessary does not always give better results.

I have sprinkled the top with flax seeds and sunflower seeds. Totally optional.

No Knead Bread

Ingredients

yeast

  • 10 grams instant yeast
  • 1 teaspoon sugar
  • 400 millilitres water

dough

  • 400 grams flour
  • 1 teaspoon salt

garnish

  • 1 teaspoon sunflower seeds optional
  • 1 teaspoon flax seeds optional

Instructions

  • Place the sugar and the yeast in a large mixing bowl.
  • Pour warm water on top. Check the warmth before adding to the yeast. The warmth of the water should be 135°F/ 60°C. You can check with a thermometer or a clean pinky finger. If you can bearly keep it in the water it is the right warmth.
  • After adding the water, whisk until bubbly and the yeast is melted thoroughly.
  • Cover and set aside to activate for about 10 minutes.
  • Then add sifted flour on top of the yeast mixture and a teaspoon of salt to taste. Mix with a spatula just enough to blend, no more.
  • Cover with a cling film. Set aside in a warm area for about 30-40 minutes.
  • When time is up, preheat the oven to 190 degrees.
  • Sprinkle some flour on the dough and again mix with a spatula gently.
  • Place a baking paper on an oven tray.
  • Use a springform cake tin. Take out the bottom and place it on the oven tray.
  • Pour the dough in. Spread it evenly in to the the springform cake tin border.
  • Sprinkle with seeds, this is optional.
  • Cover with a clean kitchen cloth so the dough does not get dry. Set aside for about 15 minutes.
  • When time is up place the tray on the middle rack of the oven. No need to cover.
  • Bake until golden brown on the top. Takes about 40 minutes.
  • When ready take out of the oven. Cover with a clean kitchen towel. Leave to cool for about 10 minutes.
  • Keep covered when not serving. Enjoy.
