Again, here is a very common olive oil dish; Leeks. This dish is surprisingly refreshing. It is extremely easy to prepare. It has a sour-sweet taste which is excellent, flavors are well balanced so the kids can enjoy it too.

Dietary Highlights of Lemony Leeks

Leeks braised in olive oil is definitely healthy, vegan and gluten-free and this dish does not contain any allergents. You must give it a try next time you are shopping for groceries. You will notice that the ingredients are low cost too.

Leeks; All you need is several leeks, the thinner-the better, make sure you rinse them really good. Leeks often have dust within its layers, so it is important to give leeks a good rinse.

Carrots; 2-3 carrots will be enough, cut them diagonally.

Rice; You will need, a tablespoon of rice, rinse the rice under flowing water. Add a teaspoon of salt and sugar. You can leave out the sugar and the rice if you choose to.

How do you prepare and cook leeks?

Rinse the leeks looking out for dust/mud hidden between layer. Cut off the stem part, but do not waste too much, a thin slice will be good enough.

Do not forget to cut the leeks and carrots diagonally. For a long time I did not know that the carrots were supposed to be cut diagonally too. However it does makes sense to make all the vegetables to look alike.

The reason why the leeks are cut diagonally is to make sure that their layers do not get loose. You can use the leeks all the way to the end, but keep in mind that the white parts are more tasty. Perhaps you might consider using the dark green parts in a soup.

Put all together in a pot, drizzle with olive oil and add water just enough to cover the bottom and cook until the rice is done, over medium heat. Check a few rice, make sure to cook there is no stiff part in the middle. I almost always use a pressure cooker for this recipe, as it saves so much time I cannot replace it with anything else.

Do not forget to let cool with lid covered and then transfer to a serving dish if you are planning to serve it chilled or at room temperature.

You can serve Leeks braised in olive oil as a main or a side dish. You can serve it warm, chilled or even at room temperature.

Ingredients

  • 500 grams leeks
  • 1 carrot
  • 1 tablespoon rice
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 lemon

Instructions

  • Cut off the stem part of the leek, without wasting too much of the white part. If you have an option buy thin leeks.
  • Do not use the very end of green parts for this dish. You can save them for a soup if you like.
  • Cut the leek into 3-4 centimetres long diagonal pieces. If the leek is very large and fat reduce to 2-3 centimetres. This is done so that the layers of the leek do not fall apart.
  • Wash and peel the carrot. Cut the carrot also in diagonal pieces.
  • Wash and drain the rice until there is no more white starchy water flowing.
  • First add the olive oil and the carrots to the pot. Mix.
  • Then add the leeks and mix.
  • Finally add everything else; rice, salt, sugar, half a lemon’s juice.
  • Add water to cover the bottom of the pot if using a pressure cooker, if not add more water. Cook with lid covered.
  • Cook until the rice is done, if necessary add a bit more hot water.
  • When rice is cooked remove from heat. Keep lid closed and set aside to cool.
  • Garnish lemon wedges.
  • Serve chilled or at room temperature.
