Who wouldn’t enjoy a crispy borek baked to become golden all around. This one is particularly easy and quick, plus low cost.
All the steps to prepare are in the recipe. Just for a quick recap; use triangular cut filo to speed up the process. You can most probably find them in a Turkish Market near by or order on-line. The picture below is of a reliable brand, but any other brand should be fine too. Even if they might look somewhat crumbly and dry the recipe will make them tasty.
About two large potatoes should be fine. Peel the potatoes and slice to thin pieces and boil with salted water. After you sauté the onion, mix with mashed potatoes while still warm.
Sparkling water is used for making the pastry more puffy.

Baked Potato Borek
Ingredients
- 18-20 triangle filo sheets
Spread
- 50 millilitres milk or water
- 50 millilitres vegetable oil like olive oil
- 100 millilitres sparkling water
Filling
- 2-3 potatotes
- 1 onion
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon red pepper flakes
- 1 pinch ground black pepper
- 5 stalks parsley
- 1 egg white
Garnish
- 1 egg yolk
- ½ teaspoon nigella seeds
Instructions
Filling
- Peel the potatoes and slice to randon thin pieces. Place all the pieces in a pot with water to cover. Add a teaspoon of water and boil and let simmer until the potatoes are well done. Use a pressure cooker if available. Use a knife and try to cut a potato if the potato cuts very easily, it shows that the potatoes are ready.
- Drain the potatoes and press down with a tool or with the back of a spoon to mash the potatoes as much as possible.
- Chop the onion. Add 2 tablespoons of vegetable oil in a skillet, heat slightly and toss in the onions. Sauté the onions until translucent.
- When onions are ready, immediately mix the onions and the potatoes.
- Add the spices and herbs. Taste and adjust the spices.
- Also add the egg white and mix well.
Spread
- Mix the milk(or water) and the vegetable oil.
Combining
- Take the filo on to your working place.
- Pour some spread on the filo with a egg brush or your hands.
- Put a teaspoon full of filling on to the widest side of the triangle.
- Curl the other two sides inwards and roll like a loose cigar.
- Pour the sparkling water into a small bowl. Dip each roll into the bowl of the sparkling water.
- Then place each roll onto the tray with an oven sheet.
- Spread some egg yolk for additional taste and color.
- Sprinkle with nigella seeds.
- Bake in a pre-heated oven at 190° Celsius until golden brown on top and bottom.
