KFC™ Style Cornflake Chicken Recipe

I know people who do not eat chicken unless it is from KFC. Well for those who are craving for some here is a similar homemade version, which will satisfy your taste buds for sure. Here is, KFC™ Style Cornflake Chicken recipe presented by me.

Steps to making Cornflake Chicken

  • Start with cutting the chicken into slices. I used 2 chicken breasts, I would have used boneless chicken thighs too if I had some. But as the chicken breasts are coated and fried, they were tasty and juicy as well.
  • Then pat the chicken dry with paper towels and season with spices and oil. I used olive oil and salt, pepper, cumin, thyme, garlic powder and paprika. Mixed the chicken to make sure it was coated well with the spices. Set aside at room temperature.
  • Meanwhile, prepare 3 bowls for the batter.
    • flour
    • cornflakes
    • eggs and milk
  • Dip the chicken slices first into flour, then into whisked chicken and milk and finally to the cornflakes.
  • Then fry and serve. These will be a big hit in your family.

How to fry chicken?

Use the deep fry method for frying, as the chicken will soak up much less oil. The oil should be heated to 350° Celsius (350°F). Do not overcrowd the frying pan, or else the oil will get cold and you will not get enough crispiness.

Check to see the crust is lightly brown and crispy and the internal temperature on the thickest part of a piece reaches 74° Celsius (165°F).

Move out the chicken to a plate covered with paper towels to soak up the excess oil and serve while still warm.

I don’t think there is anybody out there who would not want French fries with their fried cornflake chicken, so go for it and fry some! I suggest you fry the potatoes first. Just cut them to thin slices and fry until brown and crispy. Sprinkle the French fries with salt right after taking them out of the oil onto a plate with paper towels to help the fries protect their crispiness.

Ingredients

  • 2 chicken breasts
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 egg
  • 2 tablespoons flour
  • 2 tablespoons milk
  • 8 tablespoons plain cornflakes
  • vegetable oil with a high smoking point to deep fry

Instructions

  • Cut the chicken to slices. Pat dry with paper towels.
  • Season with salt, pepper, cumin, thyme, paprika and ground garlic. Add olive oil and mix until all chicken pieces are well coated.
  • Prepare 3 bowls to dip the chicken
  • The first one with flour.
  • Second with whisked egg and milk.
  • Third with cornflakes. Squeeze cornflakes with your hand to crumble.
  • Dip each piece into first flour on all sides. Shake off the excess. Then to the milky mixture and finally the cornflakes.
  • Repeat until all the chicken pieces are ready.
  • And then fry until the chicken is browned and crispy.
  • Take out to a plate with paper towels to get rid of the excess oil and serve while still warm.
  • Enjoy.

Notes

Once the chicken is ready to be fried, you can opt to bake it. Just bake it in a pre-heated oven at 200° Celsius (400° F) for about half an hour or until browned and crispy or the internal temperature reaches 74° Celsius (165° F).
You can replace cornflakes with breadcrumbs.
