Easy Cinnamon Walnut Cake Recipe

Nobody around me says no to this Cinnamon Walnut Cake, luckily it is a one pot cake and easy to prepare. The only negative part about this cake is that it finishes up way too quickly.

Sorry for not having more photos for this post yet, I will add a couple of more about the process when I update this post.

Walnuts

Start with coarsely chopping 100 grams of walnuts. I have used Californian walnuts and used a food processor and just two pulses was enough to do the job, you do not want to turn the walnuts into a complete powder, looking like sand.

Liquids

Whisk 3 eggs at room temperature with +/- 190 grams of granulated sugar. I used the mixer only at this stage and just used a spatula for mixing all the other ingredients. Once the eggs turn white, measure 100 millilitres milk and 85 millilitres of light olive oil or sunflower oil and add. I enjoy this cake more because it does not have any butter in it.

Dry ingredients

Add 250 grams sifted flour, 2 teaspoons of cinnamon and 10 grams of baking powder. Mix with a spatula, just enough to make them blend and then add the chopped walnuts. Do not forget to add a teaspoon of vanilla extract.

Oven

There, your cake is ready for the oven. Make sure it is pre-heated to 160° Celsius (325°F). Grease your pan and sprinkle with some flour. I used a 23 cm round x 4 cm height baking pan (9-inch round x 1 1/2 inch deep). Any other size or shape of pan that the cake mixture fills up to a maximum of will be fine. Bake for about 45 minutes. Check with poking a toothpick or a thin knife in the middle of the cake. If it comes out clean, take out your cake from the oven. Let rest for at least five minutes and serve.

Sprinkle with caster sugar or serve with a frosting. I prefer my cakes with just a glass or cup of tea. If you want to have something salty after this cake try my Sesame Rings recipe.

Ingredients

  • 3 eggs room temperature
  • 1 pinch salt
  • 190 grams granulated sugar
  • 100 millilitres milk
  • 85 millilitres light olive oil or similar
  • 250 grams flour
  • 10 grams baking powder
  • 2 teaspoons cinamon
  • 100 grams walnuts coarsely chopped

Instructions

  • Coarsely chop the walnuts, do not turn into a powder.
  • Use a mixer to mix the sugar and the eggs, until the mixture becomes creamy and white.
  • Add the olive oil and the milk.
  • Sieve the flour and the baking powder and add to the liquids.
  • Also add the cinnamon and the vanilla extract.
  • Mix with a spatula until well blended.
  • Add the chopped walnuts and mix for a one last time.
  • Pour into a baking tray, greased and sprinkled with flour.
  • Bake at 160°Celcius (325°F) for about 45 minutes. Check by poking a toothpick or a thin knife in the center. If it comes out clean, it shows that the cake should be taken out of the oven.
  • Rest for 5 minutes, slice and serve. Enjoy
