Chicken Alfredo
Say goodbye to store-bought alfredo sauces, you will not need to buy them any more after making your own. This is a “Don’t worry, be happy recipe!”. Here are the ingredients:
Pasta: Any type of pasta will be alright; bow-tie, spaghetti, fettuccine, penne, etc.
Chicken: Both chicken thighs and chicken breast will be fine too, just make sure to cut them to bite-sized pieces.
Thyme: Thyme gives an earthy flavor, it has a little sweet and minty side to it. Substitute: can substitute oregano with it.
Nutmeg: the aromatic nutmeg has love or hate relation with many. If you want leave it out or replace it with a ground clove.
Rosemary: Rosemary is good for so many things, such as boosting the immune system and helping digestion, I add almost always add it while cooking. You can choose not to add it.
Milk, Butter, Flour: These three are sufficient to provide the creamy consistency from scratch. Substitute: heavy cream or sour cream.
How to make chicken alfredo?
Start with seasoning the chicken with salt, black pepper, thyme flakes, rosemary, smoked paprika, nutmeg and olive oil. Mix well so the chicken is thoroughly coated with these spices and herbs. Then sear the chicken cubes is a well heated pot with butter, so that the chicken cubes get a golden crispy color. Take them out of the pot and start preparing the creaminess.
Use the same pot to prepare a creamy sauce with milk, flour, garlic, grated nutmeg, salt and butter to taste. Whisk all the way until the creamy mixture easily coats the back of a spoon.
Assembly
Combine the chicken, parmesan cheese and the sauce with pasta cooked to al-dente. Adjust creaminess with the right amount of pasta stock.
Serving Chicken Alfredo Pasta
Serve with additional freshly ground black pepper and grated parmesan and perhaps well-chopped parsley.
This chicken Alfredo pasta is so delicious, comforting and flavorful that I seek nothing else to accompany it. However if you feel you have to serve something with it, I suggest Color Rich Red Cabbage Salad or Fennel Salad With Apple And Melons.
Easy Chicken Alfredo Pasta
Ingredients
- 4 chicken breast about 500 grams or chicken thighs
- 500 grams pasta
- ½ cup pasta water, saved while draining the pasta½
Chicken seasoning
- 1 teaspoon thyme
- 1 teaspoon basil
- 2 teaspoon smoked paprika
- 1 teaspoon rosemary
- 1 tablespoon olive oil
- 1 tablespoon butter for cooking the chicken
Creamy mixture
- 2 tablespoon butter
- 2 garlic cloves
- 2 tablespoons flour
- 2 cups milk
- ½ teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1 teaspoon nutmeg
- 2+ tablespoons parmesan cheese + more for serving½ grated
Instructions
- Cut the chicken into bite-sized pieces.
- Add all the spices and olive oil. Mix to blend and set aside.
- Heat a pot at high height and melt 1 tablespoon of the butter.
- Cook the chicken in batches allowing it to brown on all sides.
- Flip the chicken until all sides change color. And cook until the chicken is cooked to 165° Celsius.
- Once all the chicken is cooked remove it to another bowl.
- Add the rest of the butter into the pot. Toss in the crushed garlic. Saute over medium heat for 2 minutes or until garlic turns light brown.
- Add the flour. Switch to a whisk. And cook off the raw flour taste for 1-2 minutes.
- Add the milk in half a cup increments, mixing until you obtain a homogenous mixture.
- Once you've added all the milk, also add salt and pepper to taste.
- Also, add the grated nutmeg for flavor.
- Cook over medium heat for 10 minutes, while continuously mixing, until the sauce coats the back of a spoon.
- Meanwhile cook the pasta to al-dente, as per instructions on the package.
- Take the sauce off the heat and add two tablespoons of parmesan cheese and the seasoned chicken. Mix to combine.
- Combine with drained pasta together with a ¼-½ cup pasta water, depending on how thick your pasta sauce is.
- Serve with black pepper and additional grated parmesan cheese. Enjoy!
