Amazing, Low-Calorie Celeriac Salad

This Celeriac Salad is so easy that it would be a pity if you do not give it a go. After I have learned that the amount of calories you spend eating celery roots is more than what you get from them, I often find a place for celery roots on my table.

What is celeriac

Celeriac – also called celery roots is a totally edible plant, the root, the stalks and even the leaves are edible.

Celery roots are lumpy and brownish and resemble other root vegetables like potatoes. Good thing is that they last quite a while before you are ready to use them.

It is a stiff root and somewhat difficult to cut. I generally peel and cut it like an apple and then grate it when preparing this recipe.

How to buy celeriac?

When you are buying pick medium-sized ones. Too big ones might be empty in the middle and the small ones might be ripe. If they have stalks and leaves still on, these should be green. 

I generally buy a large celeriac and cook a main course dish with it and save a quarter of the celeriac to make this salad.

How to prepare celeriac salad?

Start with adding the following ingredients into a salad bowl:

  • Yogurt
  • Coarsely chopped walnuts
  • Salt
  • Red pepper flakes
  • Crushed garlic cloves
  • Dry mint flakes

Only then start peeling the celeriac. As soon as peeling is finished start grating with the coarser side of the grater. Then immediately mix the grated celeriac into the add to the bowl with the other ingredients, as when peeled the celeriac darkens very quickly. Mixing with yogurt stops this change of color.

If you are doing a big batch of this salad, when you peel the celeriac drop it into a bowl of water with lemon juice, and then grate and add to the service bowl.

Tips for a better celeriac salad:

When you peel and cut the celeriac like an apple if you notice that the centre part is not stiff but rather chewy looking, take that part out and discard it as will not be very tasty.

Do not crush the walnuts too much; the walnuts should not turn into powder.

The yogurt should be plain and not too watery. The amount of yogurt should be just enough to coat the grated celery root all around and not more.

You might want to slice an orange and place some salad on of each slice to make a fancy presentation – besides the salad tastes even better when you eat it together with the orange.

You can keep in the fridge covered for 1-2 days, ours never stays that long. Hope you’ll enjoy it.

Ingredients

  • 2 celery roots medium sized
  • 400 grams yogurt plain
  • 2-3 cloves garlic crushed
  • 75 grams walnuts chopped
  • 1 pinch salt to taste
  • 1 pinch red pepper flakes optional
  • 1 pinch dry mint flakes optional
  • 1 orange optional

Instructions

  • Use yogurt that is not too watery. Put the yogurt in a mixing bowl.
  • Add 2-3 minced garlic cloves.
  • Add coarsely chopped walnuts.
  • Add salt to taste.
  • Grate the celery roots using the coarser side of the grater. Immediately add to the yogurt mixture, so that the celery does not darken.
  • Garnish with red pepper flakes and/or dry mint flakes.
  • As an alternative; cut thin slices of orange and put scoops of celery root salad on top of each slice.
  • Serve chilled.

Notes

Walnuts should be coarsely chopped, you can use a food processor to chop but do not turn the walnuts into a powder.
