Easy Recipe for Baked Oatmeal

My vegan meatballs with oatmeal is a staple in our home, but I had not posted any treats with oatmeal yet. Luckily, my daughter solved this issue. Here is her recipe for baked oatmeal, inspired by Tik Tok. Enjoy!

Why did oats become so popular?

Oats used to be something to consider for breakfast only, until lately. Now that more people know that Oats are among the “natural superfoods” and beneficial for health, recipes are flowing all around the web. Oats are a natural superfood because they are whole grain, almost no processing and full of vitamins, antioxidants, minerals and plenty of fibre.

Besides oats keep you full and help weight loss while lowering blood sugar and supporting your heart.

Ingredients for baked oatmeal

  • Oatmeals is the main player. Old fashioned or quick oats will be best for baking, as they help to bind the batter. You can look for specific gluten-free oats if necessary.
  • Banana is perfect for keeping away from sugar. Use ripe or overripe ones. Nobody will want to eat them as they are anyway.
  • Eggs are needed for keeping everything together. If you want a replacement for eggs there are plenty of alternatives such as ground flax seeds. Please check my e-book. You can download it when you subscribe to my blog.
  • Oil acts like a liquid and also provides additional flavor. Ordinary unsalted butter or coconut oil are good options. In any case, make sure butter/oil is melted before adding to the mixture.
  • Milk, any kind of milk will do, I used skimmed milk. Vegan alternatives are also welcome.
  • Something Sweet, honey, maple syrup, molasses, sugar. Make your pick. I used honey. I suggest tasting before starting to bake to test if there is enough sweetness to your likes and add more if necessary.
  • Baking powder, makes the whole mixture puff up a little.
  • Flour must be added last – if any – and gradually.

You can garnish your baked oats with anything that comes to your mind Nutella, honey, banana, strawberry, currants, raisins, chia seeds, coconut; you name it.

Baked Oats Recipe

Quick and easy recipe for baked oat with a few ingredients

Ingredients

  • 2 ripe bananas
  • 4 eggs
  • 5 tablespoons honey
  • cup milk
  • 4 tablespoons cocunut milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 4 cups old fashioned oats
  • 2 teaspoons baking powder
  • ½ cup flour add gradually

Instructions

  • Mash the banana using a fork or spatula until creamy.
  • Pre-heat the oven to 175°Celsius (350° F).
  • Melt the butter or cocunut oil over medium heat in a skillet. Keep an eye, and do not burn.
  • Grease the baking dish, including the sides, with the oil/butter you will use for the batter.
  • Add all the ingredients, except the flour, in the written sequence to a mixing bowl. Mix everything using a wire whisk or a spatula. Add the flour the last and add it gradually. When you obtail a cake like mixture stop adding the flour.
  • Pour the batter into the baking dish. Make it even using a spatula or the back of a spoon.
  • Bake in the oven for about 30 minutes or until lightly browned.
  • Let cool, garnish and serve.

Notes

Taste the batter before pouring it to the baking dish. If it is not sweet enough for your likes, add more sweet. Mix to combine and then pour. 
You can add chocolate chips, raisins or similar to the batter for additional flavor.
