Ingredients
1cupbeanscannollini or similar
1onionchopped
3garlic cloveschopped
1red pepperchopped
1tablespoontomato paste
1tablespoonpepper pasteoptional
1teaspooncumin
1teaspoonred pepper flakesto taste
½teaspoondry mint flakes
1teaspoonsaltto taste
¼teaspoonblack pepper
water to cover half way
Instructions
Soak the beans in water overnight. Rinse the next day and discard the soaked water.
Add all the ingredients into the pressure cooker.
Add water to half the height of the beans.
Mix well until the tomato paste is dissolved.
Cover and lock the lid.
Cook until the indicator rod rises, this will take about 5 minutes. Then wait until the rod comes down completely and the steam is finished, which will take about 15 minutes.
Open the lid, check a few beans, if ready serve, if not cook for another 5 minutes or less.

Notes
Always follow safety instructions of your pressure cooker. Never force to open the lid before all the pressure is released.
